Fitness Foodie’s Sweet Potato Pie by Tim Street


Fitness Foodie’s sweet potato pie recipe, made with butter and sweet potatoes, along with vanilla, lemon and cinnamon.
Ingredients:

  • 4 ounces butter, softened  
  • 2 cups cooked and mashed sweet potatoes
  • 2 cups granulated sugar
  • 1 small can (5 ounces, about 1/2 cup plus 2 tablespoons) evaporated milk
  • ½ teaspoon lemon
  • 1 teaspoon vanilla extract
  • 3 eggs, beaten
  • 1 1/2 teaspoons cinnamon
  • 2 prepared pie shells, unbaked

Preparation:
In a large bowl, mix butter, potatoes, sugar and evaporated milk until well blended. Beat eggs separately, then add vanilla, eggs, and cinnamon; mix well. Pour into the prepared pie shells. Bake in a preheated 350° oven for about 1 hour, until set. Place tooth pick into pie and if it comes out clean the pie is done
Makes 2 pies.

Common U.S. Grocery Store Labeling

  • Yam — Soft sweet potato with a copper skin and deep orange flesh.
  • Sweet potato — Firm sweet potato with golden skin and lighter flesh. 

TIM’S TIP: U.S. stores use yams and sweet potatoes interchangeably in order to differentiate one from another. When you want a traditional baked sweet potato, with a crisp skin and fluffy orange flesh, or sweet potatoes for Thanksgiving sweet potato casserole, what you should buy will be probably labeled yam in the local grocery store. Even though it's not a yam. It's a sweet potato. The soft kind.Know what kind of sweet potato you want for your recipe, and be alert to the yam/sweet potato labeling concept in the U.S., but also use your eyes to look at the color of the skin and the flesh, if possible.

Carrot Cake Recipe

  • 2 cups all purpose flour
  • 1 3/4 cups of sugar
  • 1 tsp soda 
  • 1 tsp salt
  • 1 cup vegetable oil
  • 4 eggs
  • 3 cups grated carrots
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 tsp vanilla 
  1. Preheat oven to 350 degrees 
  2. Stir dry ingredients 
  3. Beat oil and eggs
  4. Add dry ingredients to oil and eggs
  5. Stir in carrots and walnuts (if desired)
  6. Bake for 30-45 mins

Chocolate cake

  • 1 box Duncan Hines devils food mix
  • 3 eggs
  • 1 cup of mayo
  • 1 cup or milk or buttermilk
  1. 1/4 cup Hershey's chocolate
    ix all for 2-3 minutes
  2. Bake for 30-35 mins for cake and 12-18 mins for cupcakes
